Hi guys, how are you doing with this 3rd heat wave??????.? My goodness, I have won heaven, baking at 43° this afternoon, but I had to make the cake for the boys, it was well worth it, it is extra juicy and fluffy.
Today, with wholemeal spelled flour with apples, with this sponge cake I have released this mold, which is wonderful. I hope you like it and I encourage you to do it

Ingredients of Sponge cake with wholemeal spelled with apples with thermomix
4 small or 2 large apples
2 tablespoons sugar, 1 teaspoon cinnamon and lemon juice
335 gr whole spelled flour
1 on chemical yeast
1 teaspoon baking soda
1 teaspoon ginger
pinch of salt
Lemon zest
5 eggs
180/200 gr brown sugar
150ml milk
235 ml sunflower oil
Preparation of Sponge cake with wholemeal spelled with apples with thermomix
We begin by poaching the apples, to do this, we peel them and cut them into squares, add the lemon juice, sugar and cinnamon, stir.
We put a frying pan on the fire, add a knob of butter and add the apples, stirring from time to time.
When they are almost done, I add a splash of rum and let it evaporate (this step is completely optional)
Now we sift dry lis (flour, yeast, bicarbonate, spices and salt),
20 seconds / speed 6.
Transfer to a bowl and reserve.
We place the butterfly in blades, add the eggs and sugar
8 minutes / speed 3’5
then oil and milk
1 minute / speed 3’5
Remove the butterfly and add the reserved dry
10 seconds / speed 4
Add the apples and stir
We brush our mold with release spray, turn the dough over and tap it lightly against the table to remove any air bubbles.
