430 grams of flour (and a little more to work the dough)
300 grams of milk
25 grams of butter
1 egg
600 grams of water
3 teaspoons of salt
50 grams of grated Parmesan cheese
500 grams of potatoes
300 grams of pumpkin pulp
Zest of 1 lemon grated (optional)
150 grams of Gruyère cheese
5 – 6 sprigs of fresh chives
Preparation
To start the preparation of these delicious pumpkin gnocchi with thermomix cheese, you must put water in the Thermomix bowl and place the varoma container in position with the potatoes cut into pieces.
As well as, place the varoma tray with the pumpkin pulp cut into pieces. Cover and program.
30 minutes / Varoma temperature / Speed 1.
After 30 minutes of cooking, remove the tray and the varoma container, pour the potatoes and pumpkin into a bowl and let cool, reserve for a few minutes.
Discard the water from the Thermomix bowl, and with the clean and dry glass, place 50 grams of flour and if the grated lemon peel is of your choice, program.
10 seconds / Speed 10.
Add the potatoes and the pumpkin to mash, program.
20 seconds / Speed 5.
Then, pour 350 grams of flour together with the egg, grated Parmesan cheese and 1 teaspoon of salt, program.
40 seconds / Speed 4.
You will obtain a homogeneous and smooth dough. Pour it on the table previously dusted with flour and knead lightly.
After that, cut small portions of the dough and form cylinders of approx. 2½ cm.
Cut each cylinder into 2 cm pieces and run them through a gnocchi marker (you can also do this with a fork or grater).
Then dimple the center and give it its characteristic ribbed shape.
On the other hand, place in the Thermomix bowl 30 grams of flour together with the butter, milk, Gruyère cheese cut into pieces and 1 teaspoon of salt, program.
8 minutes / Temperature 90 ° C / Speed 4.
Meanwhile, cook the gnocchi in a pot with plenty of boiling water and 1 teaspoon of salt, these take between 2 and 3 minutes to cook when you see them float to the surface, they are done.
Pass the gnocchi through the strainer to drain all the water then pour them into a bowl and pour the cheese sauce over the gnocchi, sprinkle with the chives and voila!
