If you are a lover of pasta or noodles but you also like to eat low in calories, you can enjoy this dish perfectly. The Vegetable Fideua in the Thermomix will come in handy after having had some excesses during the summer, or after a week of culinary sins. This recipe calls for onions

Ingredients of thermomix vegetable fideua

250 grams of fideua noodles
2 cloves of garlic
1 medium onion
1 medium green bell pepper
30 grams of olive oil
1 medium red bell pepper
1 bunch of green asparagus cut into pieces and without the hard part
50 grams of frozen peas
100 grams of sliced mushrooms
1 ripe tomato in small pieces
800 grams of water
Salt or a bouillon cube
a few strands of saffron
1 aubergines and 1 medium zucchini (optional)
Colorant

Preparation of thermomix vegetable fideua

Chop the vegetables in the thermomix, add the onion, the garlic cloves, the peppers cut into pieces in the glass, program.
5 seconds/ Speed 5
Add oil to fry these vegetables, program.
10 minutes/ Varoma temperature/ Reverse rotation/ Spoon speed
Then, add the asparagus to soften them a bit when frying, program.
5 minutes/ Varoma temperature/ Reverse rotation/ Spoon speed
Immediately add the chopped tomato, the sliced mushrooms, the saffron threads and a little colouring, to the vegetable sauce.

Add salt or if you prefer a vegetable stock cube and water, program.
10 minutes/ Varoma temperature/ Reverse rotation/ Spoon speed
Once the vegetables are cooked and the stock cube is diluted, add the noodles and peas, program.
5 minutes/ Temperature 100°/ Reverse rotation/ Bucket speed
Depending on the brand, the cooking of the noodles may vary, if at the end of this time you feel that a little more cooking is missing, program a few more minutes.
2 minutes/ Temperature 100°/ Reverse rotation/ Bucket speed
When ready, pour into a stock or pasta dish and let sit for just a few minutes.
Serve a generous portion on each plate and you’re done.
