This recipe has been sent by our friend Luz Maria Lagoa Vives. Hello friends, today, continuing with the puff pastry, I bring you another simple puff pastry cake with custard cream and cheese, which is amazingly delicious.

Ingredients for pastry cream and cheese puff pastry with thermomix
2 sheets of puff pastry
CAKE WAS CHEESE
500ml milk
4 yolks
95 grams sugar
50 grams cornstarch
vanilla essence
50 grams butter
220 grams cream cheese
3 sheets neutral gelatin
Icing sugar for dusting
Preparation of pastry cream and cheese puff pastry with thermomix
CUSTARD CREAM
Egg yolks, sugar, milk and cornstarch in a glass,

we add the essence
5 seconds / speed 9
Pour into a bowl and add the butter, stir. We cover the skin with film (in contact with the cream), so as not to generate a scab. Let cool, then put in the fridge
|PUFFY PASTRY
Unroll the puff pastry sheets, spread them a little with the help of a rolling pin, put the ring of the mold about 22/23 cm in diameter (when baked, it shrinks a little) we want a cake of about 20 cm
We cut the circumference (with the excess dough, we will save it to give it another use in the fridge or freezer
Prick with a fork (only the disc that will go on the base. With the other disc, we will make longitudinal cuts (it is the one that will go on the surface)
Once the divisions are done, we brush with water and spread white sugar
Preheated oven at 200° heat up and down.
We bake about 15/20 minutes
Turn off, remove and let cool
We put to hydrate the gelatin in cold water, about 6/8 min.
We take the pastry maker out of the fridge, place the butterfly on blades, pour the cream and add the cheese,

Drain the gelatin, heat it for a few seconds in the microwave, just enough for it to melt, put two tablespoons of the cream in a bowl, add the melted gelatin, stir, pour it into the glass

At the base of the mold, pour the cream, smooth it, and place the pieces of puff pastry on top. We take to the fridge about 4/6 hours, or better all night.
