Ingredients of Lemon sponge cakes with thermomix icing
4 egg whites
120 grams wheat flour
140 grams of sugar
10 grams chemical yeast
35ml lemon juice
Lemon zest
40 ml mild olive oil
80ml milk
pinch of salt
A few drops of lemon juice for the whites
Yellow food coloring (completely optional)
GLAZE INGREDIENTS
200 grams icing sugar
1 teaspoon water
2 teaspoons lemon juice
Optionally lemon zest for the final decoration

CAKE PREPARATION
We put the flour and yeast in the glass, we will proceed to sift.
20 seconds / speed 8
withdraw and reserve
We clean and dry the glass extremely, place the butterfly, pour the egg whites, salt and drops of lemon juice,
5/6 minutes / speed 3’5
Remove to a bowl and reserve
Remove the butterfly, add the oil, milk, sugar, juice and lemon zest,
20 seconds / speed 5
Now we add the reserved flour and yeast,
10 seconds / speed 4
We move to a large bowl, because we are going to mix with the whites mounted. We are adding these, little by little and with enveloping movements.
These quantities are for a mold of about 18 cm in diameter, I wanted to make them individual in this cavity mold,,,
Preheated oven at 180°, heat up and down
If you use only one mold, you will need about 30/35 minutes / or until the toothpick is checked and it comes out clean. Mine have taken 20 min. Remove and let cool in the mold, then remove from the mold and let cool on a wire rack.
GLAZE MAKING
We put the icing sugar in a bowl, and we add the water and juice, as we need, it has to be dense. With a spoon, we are bathing the biscuits.
Let dry and serve. I have put a little lemon zest on top.
They are very, very fluffy, like a cloud. And a citrus flavor, delicious. I encourage you to do them. you will like them
