20 grams of black or green tea
2 liters of filtered water
240 grams of cane sugar
1 SCOBY (Symbiotic Culture Of Bacteria and Yeast)
1 glass of kombucha (if it is the first time you make it, you can use a packaged one, without flavoring)

we boil the water
8 minutes / 100ºC / spoon speed
add the tea (green or black) and let it infuse for about 10 minutes with our thermomix turned off
add the sugar and stir
30 seconds / speed 3
in a large glass jar of about 2.5 or 3 liters we put the tea, filtering it before with a filter cloth or with a fine strainer and let the tea cool until it is at room temperature
We add the SCOBY and a glass of Komcucha tea that we already had or if it is our first time or we do not have at the moment, one purchased
We proceed to the 1st fermentation
We put it in a ventilated place but not in direct sunlight (better with little light) and at a temperature of 20ºC-25ºC
the time will depend on many factors but the ideal will be between 1 and 2 weeks, a new SCOBY will form on the surface, although many people like it more fermented and leave it longer, you can try if you like it with that time, at least ferment the sweeter it will be and the more, the more acid it will be
When we finish the fermentation, we remove the SCOBYs and change to glass bottles, filtering the liquid again.
