Recipe of our friend and collaborator Luz Maria Lagoa. Some ham croquettes that the thermomixer of my mariďín has lied.

Jamomix Croquetas Croquetas Ingredients

  • 280 gr onion (in pieces)
  • 70 ml olive oil
  • 175 gr Wheat flour
  • 1’200 ml (1 liter and 200 ml) milk
  • 350 gr taquitos de ham serrano
  • 2 pinches white pepper
  • 3 nutry pinches
  • 1 teaspoon of salt

OTHERS

  • Slope Eggs (to reboce)
  • Breadcrumbs (to batter)
  • Sunflower oil (for frying)

Preparation of ham croquettes with Thermomix

  1. Onion and oil to the glass, we crush, 6 sec V-5, remove the cubilete and place the basket (anti-scoring protection), we sauté, 8 min, 120 °, V-1.
  2. We put the flour, cook, 5 min, 120 °, V-2, stir with the spatula and program again, 5 min, 120 °, V-2.
  3. We throw the milk, species and the salt, (we continue with the basket instead of the cubilete), 15 min, 100 °, V-4.
  4. Finally we throw the ham taquitos, 2 min, 100 °, V-4.
  5. We turn the dough to a fountain and cover with skin film (in contact with the dough), so as not to generate scab
  6. When it cools, we take a few hours to the fridge (better from one day to another)

Formed and frying

  1. We take the mass out of the fridge and lite the croquettes with the help of a few teaspoons.
  2. We pass them through breadcrumbs, egg and again by the breadcrumbs.
  3. I freeze them and as need, I am taking out.
  4. Abundant Sunflower oil and I’m fringing them in 6.
  5. It is advisable to fry them being semi-frozen, or completely frozen, so that when they do not open.
  6. We are depositing cooking paper to soak the oil surplus
  7. It only remains to enjoy, good benefit
