Ingredients
400 grams of gluten-free flour
60 grams of corn starch
140 grams of buckwheat flour
450 grams of water.
7 grams of dry baker’s yeast
2 tablespoons extra virgin olive oil
a tablespoon of honey
2 teaspoons of salt
Preparation
Put the water and the yeast in the Thermomix bowl and program
1 minute / 37°C / speed 1
Then add the rest of the ingredients and knead
5 minutes / spike speed.
Let the dough rest in the glass until it doubles in volume, about an hour.
When you have folded, turn the dough onto parchment paper and with your hands greased a little in oil, give it the shape you prefer.
You see that I made a loaf with a bow, without kneading, just forming it.
