Fresh pea pesto ingredients with thermomix
350 grams of fresh peas
50 grams of almonds
30 grams of pine nuts
80 grams of extra virgin olive oil
50 grams of Grana Padano cheese or Parmesan cheese
10 fresh basil leaves
5 fresh mint leaves
1 clove garlic
100 grams of water
½ teaspoon of salt
2 mint leaves
juice of one lemon
Preparation of Pesto of fresh peas with thermomix
To begin the preparation of this fabulous recipe, keep in mind that the chosen cheese is Parmesan or Grana Padano, it must be grated, if not, place the pieces inside the thermomix glass and program.
10 seconds / Speed 8.
Once the cheese is grated, remove to a bowl or container and reserve.
To continue, you must do the same procedure with the almonds without skin and the pine nuts, program.

When the almonds and pine nuts are crushed, pour them into a bowl and reserve.
Back in the thermomix glass, pour the finely chopped garlic clove together with the oil and program.

When the garlic sauce is ready, add the fresh peas without shells along with the water and salt, program.
15 minutes / Temperature 100° / Speed 1.
Once the peas are cooked, add the basil and mint leaves, as well as the lemon juice and grated cheese, program.
30 seconds/ Speed 8.
Once the programmed time has elapsed, check the salt point and the consistency, if it is too thick, add a little hot water and mix again.
