- 1 or 2 pinches of yellow food coloring
- 1 teaspoon salt
- 300 g fideuá noodles
Preparation of Fideuá with Mussels with Thermomix
Step 1: Cooking the mussels
- To start, you will need to steam the mussels. This step is essential to obtain all the flavor of the seafood. Follow these steps:
- Add 200 g of water to the Thermomix® glass.
- Place the Varoma container in its position with the fresh mussels. Make sure the mussels are very clean.
- Cover the Varoma and program 15 minutes, Varoma, speed 1.
- Remove the Varoma and uncover it, reserving the mussels.
- Strain the liquid from the glass through a fine mesh strainer and set aside for later use. This liquid contains the flavor of the mussels and will be the base broth for the fideuá.
- Rinse and dry the Thermomix® glass.
Step 2: Preparation of the sauce
- The sofrito is the heart of the fideuá. The flavors that will give life to the dish are concentrated in it. Follow these steps:
- Add the onion, garlic, pepper and olive oil to the glass.
- Blend everything for 3 seconds at speed 5.
- Sauté the mixture for 5 minutes at 120°C, speed 1.
- This process allows the vegetables to release their aromas and the olive oil to capture all the flavors.
Step 3: Cooking the tomato and paprika
- To give color and intense flavor to the fideuá, it is essential to use tomato and paprika.
- Add the crushed tomato, paprika and pinches of yellow food coloring to the glass.
- Sauté everything for 10 minutes at 120°C, speed 1.
- While the sauce is cooking, you can take the opportunity to remove the shells from the cooked mussels and reserve them for later.
Step 4: Preparation of the broth
- The broth is crucial to obtain a very tasty fideuá. Here we use the cooking liquid from the mussels, which will be enriched by the sauce.
- Add the salt, the mussel cooking liquid and water to the glass to make 800 g in total.
- Program 8 minutes at 100°C, speed 1.
- This broth will be the perfect base for the noodles to absorb all the flavor.
Step 5: Cooking the fideuá noodles
- Now that you have the broth ready, it’s time to add the pasta.
- Add the 300 g of fideuá noodles to the glass.
- Program 8 minutes at 100°C, reverse rotation, speed 1.
- The reverse turning is essential to prevent the noodles from breaking during cooking.
Step 6: Platter Assembly
- Once the fideuá is cooked, all that remains is to add the mussels and give it the final touch.
- Pour the fideuá into a serving dish.
- Add the mussels and mix with a spatula.
- Let it rest for a few minutes so that the flavors integrate well.
- And that’s it! Your fideuá with mussels is ready to serve and enjoy.
Tips to make the best fideuá with mussels
- Fresh mussels: Use fresh mussels to get the best flavor of the sea. You can accompany the fideuá with a touch of lemon to enhance the flavor.
- Yellow coloring: Although it is optional, the yellow coloring gives the fideuá that characteristic golden tone that makes it more appetizing.
- Resting time: It is important to let the fideuá rest for a few minutes before serving, since the noodles will continue to absorb the broth.
