Ingredients of aubergines stuffed with prawns with thermomix
200 grams of clean and peeled raw prawns
2 medium-large aubergines (Corresponds to 4 portions)
4 cloves of garlic
100 grams green pepper chopped into pieces
100 grams red pepper chopped into pieces
1 small onion chopped into pieces
1 grated carrot
50 grams leek chopped into pieces
2 tomatoes chopped into pieces
50 ml plain tomato sauce
50 ml of extra virgin olive oil
Salt and pepper to taste
Parmesan cheese to taste (to gratin)
Coriander or parsley sprigs (for garnish)
Preparation of aubergines stuffed with prawns with thermomix
Wash the aubergines and chop them in half, remove the pulp, leaving only 0.50 cm of edge. The pulp is chopped into cubes and reserved. And bake the aubergine halves for 15 minutes with a little olive oil on top.
While the aubergine halves are baking, add the onion, the two types of peppers, the leek and the garlic in the Thermomix bowl to blend, program.

Then, with the spatula, clean the walls of the Thermomix bowl and add the olive oil, fry the already crushed ingredients, program

Add the grated carrot, the aubergine pulp and the diced tomato, program.
20 minutes / Varoma temperature / Speed 1.
Then add the tomato sauce, program.
5 minutes / Varoma temperature / Speed 1.
Once the stuffing is ready, add it to the halves, place the prawns on top.
Bake for a few minutes until the prawns are cooked, approximately 15 minutes. If you want to add a little Parmesan cheese to gratin, this is optional.
