Ingredients
150 grams or 2 aubergines
2 large tomatoes, ripe but not too soft
1 red bell pepper
1 green pepper (or 150 grams of one of the two)
1 onion
100 grams of Serrano ham (you can combine with bacon, 50 grams of each)
30 grams of extra virgin olive oil
1 vegetable broth tablet, or alternatively ½ cup of vegetable concentrate
3 sun-dried tomatoes, chopped (optional)
3 eggs, beaten (optional)
Salt to taste
Preparation
We start by crushing the 2 large tomatoes in the glass of the thermomix, program.
15 seconds / Speed 7.
Remove the tomato smoothie from the Thermomix bowl and reserve.
Add the pepper(s) and the onion cut into pieces to the Thermomix bowl, program.
5 seconds / Speed 5.
In the same way, reserve the minced peppers and onion.
Again in the glass of the thermomix, without the need to wash, add the aubergines cut into pieces, program.
3 seconds / Speed 4.
Once the aubergine has been crushed, add the Serrano ham (if you use bacon, add it as well) along with the dried tomatoes, a little oil, the broth or the vegetable cube and the minced pepper and onion, program.
