Ingredients of Eggplant, cheese and walnut croquettes with Thermomix
205 grams of goat cheese
3 eggplants
52 grams of chopped walnuts
Salt and ground pepper to taste
The juice of half a lime
Olive oil
2 tablespoons soy sauce
A pinch of turmeric
A pinch of ground cumin
A pinch of curry
For the bechamel:
Salt, pepper and nutmeg to taste
205 grams of milk
62 grams of flour
62 grams of butter
22 grams of cornstarch
For the batter:
Bread crumbs
2 large eggs beaten
Preparation of eggplant, cheese and walnut croquettes with Thermomix
When you have gathered all those ingredients in the kitchen, follow these steps:
Cut the eggplants lengthwise, make some cuts and add a little salt and pepper, as well as a splash of oil. Place them on a baking tray and put it in the oven. Keep it there
180º / 30 minutes.
Take them out, wait for them to cool a little and remove the meat, which you will then have to chop.
In a bowl, add the eggplant meat and add the walnuts, goat cheese, lime juice, cumin, turmeric, soy sauce and curry. Mix everything well and reserve.
Now comes the time for the béchamel. To do this, add the butter to the robot’s glass and set it to
speed 2 / 120º / 2 minutes.
Then, add the cornstarch and flour. Program to
speed 2 / 120º / 3 minutes.
Add the pepper, milk, nutmeg and salt. Start the robot
speed 6/6 seconds.
Then cook
speed 4 / 100º / 10 minutes.
Pour the reserved eggplant mixture into the glass and program to
speed 2 / 100º / 3 minutes.
Pour the contents of the glass into a bowl, cover it with plastic wrap and let it rest for 2 to 3 hours.
After that time, shape the dough into croquettes, pass them through the breadcrumbs, then through the eggs and again through the breadcrumbs. All that’s left to do is fry them in a pan with very hot oil.
