Ingredients for Coffee Mousse Cake with Thermomix
CAKE INGREDIENTS (18 CM)
2 eggs
100 grams of flour
20 grams of pure cocoa powder
5 grams of chemical yeast
100 grams of sugar
80ml milk
40 ml of oil
Teaspoon instant coffee (optional)
COFFEE MOUSSE INGREDIENTS
150 ml of coffee (freshly brewed)
170 grams of sugar
300 grams of cream cheese
500 ml of whipping cream
8 gelatin sheets
Preparation of Coffee Mousse Cake with Thermomix
CAKE PREPARATION;
Preheat the oven to 170°C / heat up and down
Sift the flour, cocoa, soluble coffee and yeast,
10 seconds / speed 8
Withdraw and reserve.
Introduce the eggs with the sugar in the glass, 2 minutes / speed 4. Add the milk,
15 seconds / speed 4
then the oil
10 seconds / speed 4
incorporate flour, cocoa, soluble coffee and yeast,
6 seconds / speed 4
Grease the mold and pour the mixture,
bake 30 minutes
or until checking the toothpick, it comes out clean. Remove and let cool on rack.
MOUSSE ELABORATION;
Hydrate the gelatin in cold water for 5 minutes / then drain it and add it to the freshly made coffee, put it in the glass,

add cheese and mix

Withdraw and reserve.
Wash and dry the glass well, introduce the sugar and pulverize,
5 seconds / progressive speed 5-10
place the butterfly in blades, introduce the very cold cream and semi-assemble (careful, this will be done right away))
Pour the whipped cream into a bowl. Go adding to the cream and little by little, the reserved coffee and cheese cream, with a spatula and enveloping movements, so as not to lower the cream.
CAKE ASSEMBLY
When the cake is cold, we split in half
In the same mold where we have made the sponge cake, place a sponge disk, pour the mousse and finish by placing the other sponge disk. We take to the fridge about 8 hours (better all night).
After time, we finished decorating to taste. (I have sprinkled grated coconut on its surface)
