Ingredients of Cocido Montañes with thermomix
- 200 grams of beans
- 1/2 pig ear
- 1 sausage
- a rice pudding
- 1 knuckle bone
- 100 gr strip of salted bacon or pancetta
- a garlic clove
- 50 grams of oil
- 1 bunch of collard greens
- 150 grams of potatoes
- 90 grams of marinated pork rib
- Salt
- 1000 grams of water
Preparation of Cocido Montañes with thermomix
- The beans are soaked overnight before making our mountain stew in a container
- in another the knuckle bone, the bacon and the ear
- a few hours later…
- Before using our thermomix we will put the beans, the ear, the knuckle bone and the bacon in a pot for 2 and a half hours. We reserve about 500 grams of the cooking water.
- Preparation of the cabbage
- We put the water in the glass of our thermomix and program
- 20 minutes / 100º / spoon speed.
- After 15 minutes, add the collard greens into pieces through the mouthpiece. We remove and drain and reserve the cabbage
- Now put the oil and garlic in the glass of the thermomix and program
- 1 minute / 90º / speed 3.
- Place the butterfly on the blades, add the sliced chorizo and black pudding, 500 grams of water from cooking the beans, the mashed potatoes and program
- 20 minutes / varoma / left turn / spoon speed
- Finally we chop the meat, and join the beans, cabbage and potatoes, add the rest of the stew, check how salty it is and give it a final touch of 10 minutes in the pot
