1000 grams of tomatoes
25 grams of coarse salt
1 teaspoon sugar or sweetener

We will start by washing the tomatoes well and drying them later, we divide them into 4 pieces and put the coarse salt on top and leave them in a colander for a few hours so that the tomato releases the water
After a few hours we put the tomatoes in our Thermomix bowl, along with the sugar or sweetener and program
30 minutes / 100ºC / speed 1
over time we see how our tomato is, if it is liquid or with a correct texture, if we see it very liquid we can put it a few more minutes
then we will go on to crush the tomatoes for what we programmed
40 seconds / progressive speed 7-8-9
we fill the jar or jars, cover it tightly and put them upside down
We will keep them face down in a place without light, cool and dry
