510 grams wheat flour (normal, all use)
15 grams fresh yeast
40 grams sugar (20 grams of the blanquilla and 20 ml of the invert)
150ml milk
150ml water
pinch of salt
50 grams butter
1 beaten egg for brushing

Temper the milk for a few seconds in the microwave and add the crumbled yeast and stir.
In the thermomix glass, place the water, sugar, milk with yeast and flour mixed with salt,

Let rest for 20 min so that the flour particles hydrate.
Then we knead
3 minutes / spike speed
Next we are adding the butter to little cubes, and we knead another 3/4 min.
Transfer to a lightly greased bowl and cover.
We let it increase in size.
Depending on the temperature of your kitchen, between 1 hour or an hour and a half
Afterwards, we degas (remove the air created after leavening), kneading for a minute by hand.
FORMED
Weigh the dough and divide it into 8 equal-sized portions.
We round each portion and cover it for 15 min.
After that time, each ball is crushed and stretched with a roller.
We put the nutella in a pastry bag so that it is more comfortable for us to fill.
We put one or 2 rows of filling.
We close, we unite so that the filling does not come out.
We are depositing on a tray lined with baking paper. When we have all the buns formed, we cover and let them increase in size.
About 45 min to 1 hour.
Brush with the beaten egg and bake (preheated oven to 220°, heat up and down), about 10 min.
