Ingredients
For the mass:
22 grams of fresh yeast
87 grams of milk
a pinch of salt
3 eggs
47 grams of sugar
262 grams of bread flour
62 grams of butter
For the filling:
127 grams of butter that is not cold
37 grams of water
72 grams of sugar
Preparation
When you have gathered all those ingredients, follow the steps that we indicate:
Start with the dough. For it. Pour the sugar, butter, and milk into the robot’s glass. Program a
speed 2 / 37º / 2 minutes.
Then add the yeast and two eggs. Program a
speed 4/5 seconds.
Then, add the flour and start the robot at
speed 6/15 seconds.
Then, add the salt and program
spike speed / 3 minutes.
Next, let the dough rest to double in volume for 1 hour and 15 minutes.
After that time, take out the dough and put it on the counter, where you will have added a little flour. Shape it into a cylinder and cut it into several pieces. Shape those into buns and squish them a bit.
Put greaseproof paper on a baking sheet and then put the buns there. Leave them for half an hour to double in volume.
After that time, with the third beaten egg, paint them.
Put the tray in the oven, previously preheated, and leave them there for about 9 minutes at 220º.
Let them cool.
Meanwhile, make the filling by pouring the sugar and water into the glass. Program a
speed 2 / 100º / 5 minutes.
