70g butter
2 egg yolks
20g of water
1 teaspoon of lemon juice
½ teaspoon of salt

Preparation
We begin with the preparation of the delicate hollandaise sauce, cut the butter into pieces and put it to melt in the thermomix, program.

Once the butter is melted, make sure there are no pieces left to melt, pour it into a container and set aside.
Back in the glass of the thermomix, without having to wash it, pour the water, the lemon, salt, pepper and the egg yolks, program.

Before the end of the programmed time and when the temperature of the mixture reaches 60°, add the butter little by little, in the form of a thread, very slowly and very carefully through the mouth of the lid of the Thermomix container.
When the cooking time is over, check that the consistency of the sauce is not too thick, if it is too light, program 1 more minute, same temperature, same speed.
When it’s the right thickness, keep beating until cool.
