Ingredients
430 ml of water
750 grams of wheat flour
10 grams of fresh yeast
2 teaspoons of salt
Preparation
To start we put the water and fresh yeast in our Thermomix bowl and program
2 minutes / 37 ° C / speed 2
lightly grease a bowl and leave reserved
Add the flour and salt and knead
2 minutes / spike speed
We put the dough in the reserved bowl and cover it with plastic wrap for 1 hour
and let stand until doubled in volume (approx. 1½ hour).
then we give it the shape of the bagettes (about 3 large ones) and we hit the dough several times against the table or surface while we are stretching
Once with the shape, we make the elongated cuts and let it rest in the oven off on a baking paper for even 30 minutes
We remove the baguettes from the oven and preheat the oven to 230ºC, with 2 trays inserted (one below and one a little higher where the bagettes will go)
When the oven is hot, put the baguettes with the greaseproof paper on the top tray and a container with water on the bottom tray.
