Ingredients of Apple Empanada with thermomix
INGREDIENTS BREAD DOUGH
450 grams of wheat flour
150 ml of milk
8 grams of fresh yeast
50 grams of sugar
60 grams of butter (in ointment, sease, soft)
1 whole egg
pinch of salt
FILLING INGREDIENTS
6 apples (the ones you have, but preferably pippin)
60 grams of brown sugar
A splash of liquor (optional), I have added rum)
1 tablespoon butter
Preparation of Apple Empanada with thermomix
DOUGH PROCESSING;
Introduce in the glass, the milk and the crumbled yeast, program
2 minutes / 37°C / speed 1
Add the flour, sugar, egg, salt, mix
10 seconds / speed 4
Knead 1 minute / closed glass, spike speed.
Let stand inside the glass, 20min. (so that the flour particles are properly hydrated), now we knead 3 minutes / spike speed, we finish adding the butter by the vowel, we knead another 3 min.
After this time, we put it in a bowl, previously greased with sunflower oil, let it rest for 2 hours, covered and sheltered from drafts. (in the oven turned off)
ELABORATION STUFFED;
Peel and cut the apples into squares, in a frying pan add a knob of butter, introduce the apples and the brown sugar (medium low heat,
from time to time we remove, 7 or 8 minutes / we add the liquor, over high heat until the liquor evaporates. We booked.
DOUGH PREPARATION;
After the rising time has passed, we preheat the oven to 180 degrees heat up and down, remove the dough from the bowl, degas (remove air), knead and fold on itself.
We divide it in two, leaving a larger part for the base.
Let stand 15 min covered.
We stretch the dough with the help of a roller, we have to have a thickness of half a centimeter. We place baking paper on a large plate, and place the part of the base, fill with the apples and their syrup.
We stretched the other dough and covered the apples. We are closing the edges with folds, we make a hole in the middle (as a chimney).
Prick the entire base with a fork and brush with beaten egg. Bake in the oven for about 35 minutes / or until golden brown.
