Ingredients of red wine ice cream with Thermomix

1 bottle of red wine (of good quality)
1 cinnamon stick
350 ml of cream
200 ml of whole milk and better if it is fresh milk
150g sugar
4 egg yolks

Preparation of red wine ice cream with Thermomix

We mix in the glass of our thermomix the liter of wine and the cinnamon stick
and reduce the wine, 20 minutes at 100º speed 2
Once reduced, we should have about half or even less left and with a much higher density of wine, remove the cinnamon stick and remove and let cool in a separate container
Heat the milk and cream in the microwave (3 minutes 800w)
While we beat with the thermomix, the yolks and the sugar until doubled its volume
pour in the milk and cinnamon, and add the wine. Until well bind its ingredients
Go to the refrigerator, and butter.
If we do not have a refrigerator, we put it in the fridge and stir every two hours so that it does not crystallize, we will do this a minimum of four times.
