BASE
150 grams cookies (the ones you have)
60 grams butter
Rum splash (optional)
FILLING
375 grams cream cheese
70 grams sugar
375 grams peach puree
225 ml cream (to mount)
5 sheets gelatin
5 diced peach slices
DECK
150 grams peach puree
55 grams sugar
2 sheets gelatin
100 ml cream (to mount)
3 peach slices (decoration)

BASE
Cookies in the glass,
10 seconds / speed 8
Pour into a bowl and add the melted butter, stir.
Line the base of the mold with baking paper, or place the ring of the mold on top of the presentation tray (as in my case), and the sides with acetate, (failing that, with baking paper).
We overturn the cookies and press with the back of a glass. We reserve in fridge
FILLING
Butterfly in blades, we semi mount the cream speed 3’5. We reserve in fridge
We put to hydrate the gelatin in cold water
Cheese to the glass, we cream,

we add the sugar,
30 seconds / speed 3
then the peach puree,
30 seconds / speed 3
drain the gelatin and melt it for 10 seconds in the microwave, add it to the glass,
10 seconds / speed 3
we overturned to a bowl.
Remove the cream from the fridge and add it to the previous mixture, little by little and with enveloping movements.
We take the base out of the fridge and pour 1/3 of it over the cookies, now we spread half of the peach into cubes, we add another third of cream and we spread the remaining peach cubes, we finish by covering with the remaining cream.
Smooth and put in the fridge for about 4/5 hours

We put to hydrate the gelatin in cold water
In a saucepan, we put the puree and the sugar, moderate fire, we cook about 4 min We turn off.
Drain the gelatin and add it, stir, now add the cream, stir.
Take the cake out of the fridge and pour it on the surface.
We take back to the fridge about 4/6 hours. After that time, we unmold and plate
