Ingredients of Sobaos Pasiegos and pineapple tart with Thermomix
For the pineapple cream
- A large can of sliced pineapple in its juice (reserving its juice for later)
For the pastry cream
- 500 grams whole milk
- 100 grams of sugar
- 3 large eggs
- 40 grams Cornstarch
- 1 splash liquid vanilla
For base and mounting
- 12 small Pasiegos sobaos or 6 large sobaos
- 500 g whipping cream with 35% MG (important: it must be very cold)
- 60g icing sugar
To decorate
- Chopped almonds
Preparation of Tart of Sobaos pasiegos and pineapple with Thermomix
- Preparation of the pineapple cream
- Reserve the pineapple juice from the can
- We put the basket in our Thermomix and place the pineapple slices in it so that all the juice drips
- about 15 minutes
- we put the juice with the rest of reserved juice
- Once drained we put them in the Thermomix bowl and crush them
- 40 seconds / progressive speed 6-8-10
- remove and reserve the pineapple
- Preparation of the pastry cream
- We put all the ingredients of the cream, without washing the glass and we program
- 8 minutes / 100ºC / speed 3
- we remove and reserve the cream covering it with plastic wrap attached to the cream, since we do not want it to form that light crust
- Preparation of whipped cream
- We put the sugar in our completely dry Thermomix bowl and pulverize it
- 10 seconds / progressive speed 8-10
- We place the butterflies to the blades and put the cream (very cold) and program
- speed 3 / no time
- we look through the mouth of our Thermomix until the cream is mounted
- We assemble our Tarta de Sobaos pasiegos and pineapple with the Thermomix
- We place a tray and we put 4 small sobaos or 2 sobaos if they are from the big ones divided in half crosswise and we wet them before in the pineapple juice
- then we cover them with a layer of cream and another of cream
- We place another layer of sobaos also soaked in pineapple juice and pour the rest of the pastry cream on top and cover the entire cake with cream on top
- we can put the toasted almonds chopped by oak, we reserve a couple of hours in the refrigerator and our cake will be ready to eat
