Ingredients

500 grams of monkfish
1 liter of fish stock
200 grams of round grain rice
1 onion
2 cloves of garlic
50 ml. of virgin olive oil
100 grams of crushed tomato
150 ml. Of white wine
1 teaspoon of sweet paprika
Salt to taste.
Chopped parsley or coriander for decoration.

Instructions

Prepare a fish broth beforehand. Use the bones or spines of the monkfish.
Place in the glass of the thermomix the bones of the monkfish, one liter of water and program. 15 minutes / Temperature of the monkfish / Spoon speed.
When the broth is ready, strain and reserve covered.
Then in the same glass of the thermomix crush the onion, and garlic 2 minutes / speed 7.
Next, add the crushed tomato, the olive oil and the teaspoon of sweet paprika, crush 3 seconds / speed 5.
And then all this mixture is fried, program 10 minutes / Varoma Temperature / speed 1. Immediately, the fish should be cooked. Add the 500 grams of monkfish cut into medium pieces, the fish stock and salt to taste 12 minutes / Varoma temperature / inverse rotation / spoon speed.
Check the cooking of the fish every 5 minutes.
Once cooked, remove the pieces of fish with a skimmer so as not to overcook them and set them aside.
In a thermomix glass with the vegetable sofrito and the white wine, add the rice and program. 20 minutes / Temperature of the fish / inverse rotation / spoon speed.
When cooking rice, it is always advisable to check the cooking point, you can try it after 15 minutes, as the time depends on the varieties.
