Today’s is a very fresh lemon cake, very appetizing and creamy.

BASE
150 grams cookies
75 grams melted butter
STUFFED
5 natural yogurts (preferably Greek, since they are creamier)
Juice and zest of 2 lemons. (80 ml, approximately juice)
100 grams sugar
200ml milk
5 sheets gelatin
COVERAGE (LEMOND CURD)
Juice of 4 lemons (approximately 160 ml)
200 grams sugar
2 eggs + 1 yolk
100 grams butter (diced)
1 sheet and a half gelatin
DECOR
150 ml cream (to mount)
15 grams icing sugar

BASE
Cookies in the glass,
10 seconds / speed 8
Transfer to a bowl and add the melted butter, mix
We line the base of the mold with baking paper and the sides with acetate (failing that with baking paper).
We overturn the dough and distribute by surface.
We take to the fridge
STUFFED
We put to hydrate the gelatin in cold water (8/10 min)
Butterfly in blades, add the yogurt, sugar, and half the juice,
1 minutes / speed 3
Now we are adding the milk by the vowel at speed 3, when it has all been incorporated, we stop
Heat the remaining juice for a few seconds, drain the gelatin and add it, stirring until it disintegrates. Pour into the glass and mix

We overturned on the basis of cookies
We take to the fridge about 4/6 hours
DECK
We put to hydrate the gelatin in cold water (8/10 min)
Juice, sugar, eggs and yolk in a glass,
5 seconds / speed 6
Add the butter,
6 minutes / 90°C / speed 4
We set aside a bowl.
Drain the gelatin and add it, stir until disintegrated.
Let warm a bit (do not get cold)
Take the cake out of the fridge and add the lemon curd
