Preparation of Pantxineta or Panchineta with thermomix

1. Let’s preheat the oven to 200ºC
2. We put on the cream and for that we put all the ingredients in the glass and program
3. 7 minutes, 90º, speed 4. (Starting at 5 minutes, keep looking at it because depending on the use that we are going to give it, it will interest us more or less thick. With 7 minutes it becomes very, very thick).
4. We remove the pastry cream from the glass and reserve it in a container covered with film that I touched the cream to prevent it from making a crust.
5. We put the puff pastry in 2 circles, one of them a little larger than the other, which is the one that we will use as a lid
6. We put the smallest circle on the oven tray that we will have covered with baking paper
7. paint the edges with a brush with the egg yolk
8. Spread the cream over the puff pastry
9. cover with the large circle of puff pastry, pressing the edges and paint the surface again with our brush and the egg yolk
10. flatten the edges well with a fork
11. put the chopped almonds on top and the sugar
12. Bake at 180º C for 20-25 minutes.
13. Sprinkle with icing sugar.
