Ingredients
for the cake
5 eggs
35 g of bitter cocoa powder
120 grams of sugar
100 grams of corn starch
1 pinch of salt
Vanilla extract (a few drops)
powdered baking powder
for the cream
250 ml of cream
250g mascarpone
100 grams of sugar
2 tablespoons of honey

the cake
We put the butterfly in our Thermomix bowl and put the sugar, the eggs and a pinch of salt and program
10 minutes / Speed 4
Add the cornstarch, cocoa, yeast and vanilla extract and program
3 minutes / speed 3
We put the resulting mass on the baking tray and bake at
200ºC / 9 minutes
Then we take it out of the oven and cut it into a perfect rectangle. cut it in half and let cool
the filling:
we put the sugar and pulverize

reserve in a bowl
without the butterfly, we put the very cold cream in our glass that will have it very cold (as when we make cream) and we program

Without washing the cup, place the butterfly, we put the previously reduced sugar in the powder and the mascarpone and program

Add the cream and honey and mix
1 minute / speed 1
We moisten the sponge cake with the milk, fill the entire surface with the cream and place the second rectangle on top, applying light pressure.
Cover with plastic wrap and let it rest in the fridge for an hour, then cut into small rectangles and serve.
