Hello companions. Today I bring you a new Christmas recipe, so that you can prepare it in the near future
It is a sweet bread, stuffed with fruit, a very fluffy crumb, and everything as a whole is delicious. I hope you like it and I encourage you to do it.
Christmas Sweet Bread with Thermomix

DOUGH
- 350 grams strength flour
- 18 grams fresh yeast
- 90 grams sugar (45 ml of the inverted + 45 grams of the blanquilla)
- 2 eggs (M)
- 60ml milk
- 1 teaspoon orange blossom water and 1 rum
- pinch of salt
- 50 grams butter (TA)
- 100 grams candied orange in pieces
- 60 grams raisins (soaked with a little rum or orange juice, at least 1 hour)
- 60 grams walnuts (lightly split)
- 70 grams walnuts (lightly split for the surface)
- Icing sugar (for sprinkling)
- Beaten egg (for brushing)
SYRUP
- 60 grams sugar
- 60ml water
- 20ml rum
- 2 orange peel strips
DOUGH
- Temper the milk for a few seconds in the microwave, add the crumbled yeast, stir.
- We put the eggs, sugar, yeast, orange blossom water and rum in the glass,
- 6 seconds / speed 4
- now the flour with the salt,
- 10 seconds / speed 4
- Let rest for 20 min for the flour particles to hydrate
- then we knead
- 8 minutes / spike speed
- when finished, we add the butter to little cubes for the vowel, we knead others
- 6/8 minutes / spike speed
- Transfer to a lightly greased bowl and cover. Let stand 2 hours
SYRUP
- All the ingredients in the glass, as we put the orange peel, the models that do not have the option of turning to the left or reverse (change of direction in the blades), it is with the throttle on and at speed 1. Clarified this, we program
- 5 minutes / 90° / turn to the left or reverse / speed 1
- Pour into a jug and reserve
FORMED AND BAKING
- After the rest of our dough, we sprinkle flour on the table and turn the dough over, and, with our fingers, we stretch it (and thus we degas it), so that the fingers remain marked in the dough (see photos),
- now we spread the candied orange, the drained raisins and the 60 grams of walnuts, we are rolling the dough so that all the fruits remain inside; and we knead to integrate them.
- We make a ball and leave it on a tray lined with baking paper, cover.
- We let it increase in size (approximately 2 hours).
- Then, we will make 3 cuts on the surface, with the help of a blade or knife.
- Brush with the beaten egg and place the 70 grams of split walnuts per surface. Preheated oven to 160°, heat up and down.
- We bake about 40/45 min.
- Turn off, remove and pour the syrup (previously removed the orange skins), sprinkle icing sugar on the surface
