40 grams flour
40 grams ground walnuts
40 grams brown sugar
pinch of salt
1 teaspoon cinnamon
40 grams butter (very cold)
CHEESE CAKE
300 grams cream cheese
100 grams brown sugar
3 natural unsweetened Greek yogurts
30 grams cornstarch
3 eggs
200ml cream
vanilla essence
2 teaspoons lemon juice

CRUMBLE

We line the mold, base and walls with baking paper, and cover the bottom with albal, pour the cream over, take the crumble out of the fridge and spread it over the surface. We introduce the mold in a fountain, and pour boiling water.
We put in the oven and bake about 50 min. Even if the center shakes, the cake will be curdled. Turn off and let cool on a wire rack (without unmolding), then put in the fridge for about 6/8 hours, so that it finishes solidifying. After that time, we demolished and plated.
