We have put several typical dishes of Cantabria to make them with our thermomix, surely we will be putting some more.
But one of those that we still have to put on and that is a delight is the Cantabrian Cream, made with sobaos pasiegos A little of Cantabrian pomace cream and cream, milk and eggs

Ingredients of Cantabrian Cream with Thermomix
For the cream:
200 grams of fresh milk of the day or whole
250 grams of liquid cream to mount
4 large eggs
65 grams of pomace cream
120 grams of sugar
30 grams of corn flour (Maizena)
For the assembly:
6-8 small sobaos
a little pomace cream
2 tablespoons of sugar
Preparation of Cantabrian Cream with Thermomix
We will start by mixing in our Thermomix bowl the milk, the eggs, the cream, the cornmeal and the pomace

when finished we program
10 minutes / 90º C / speed 3
while we put the sobaos in a small clay container so they can be used as a base and we moisten them with a little pomace cream, we don’t have to get them drunk, just a little so that they take on the aroma
We pour the content of our Thermomix bowl over the sobaos and let it cool a little
before serving we will put the sugar on top and with a kitchen torch we will caramelize the sugar and our Cantabrian cream will be ready
