  • 🫘 300 g cooked white beans (drained)
  • 🥔 2 medium potatoes, mashed
  • 🥕 1 carrot sliced
  • 🫑 ½ red pepper in pieces
  • 🫑 ½ green pepper in pieces
  • 🧅 1 onion, quartered
  • 🧄 2 cloves of garlic
  • 🍅 1 ripe tomato or 150 g crushed tomato
  • 🫒 50 g extra virgin olive oil
  • 🌶 1 teaspoon sweet paprika
  • 🌿 ½ teaspoon cumin (optional)
  • 🍃 1 bay leaf
  • 💧 600 g of water or vegetable broth
  • 🧂 Salt to taste
  • 🍋 (Optional) a splash of vinegar at the end

Step-by-step preparation in Thermomix

1️⃣ Base sofritoPut the onion, garlic, peppers and tomato in the glass.
Grind 5 seconds / speed 5.
Scrape down the remains with the spatula, add the olive oil and sauté.
10 minutes / 120 °C / speed 1.
2️⃣ SpicesAdd the sweet paprika and cumin.
Mix 10 seconds / speed 1 to integrate without burning the spices.
3️⃣ Potato and vegetable stewAdd the crushed potatoes, carrot, bay leaf, water or broth and salt.
Program 25 minutes / 100 °C / reverse rotation / spoon speed.
4️⃣ Add the beansAdd the cooked white beans and program
10 minutes / 100 °C / reverse rotation / spoon speed.
5️⃣ Final touchTaste, adjust the salt and add a splash of vinegar if you like the traditional touch.
Let rest 5 minutes before serving.

Tips for a perfect stew

  • 🥔 Click the potatoes to release starch and thicken the broth.
  • ⏳ It’s even tastier from one day to the next.
  • 🥄 If you want it thicker, mash some potatoes inside the glass at the end.
  • 🔥 Do not raise the temperature after adding the paprika to avoid bitterness.
