Recipe from our friend and collaborator Luz Maria Lagoa. Jesus, today we bring a fresh and surprising version of the classic gazpacho, where the melon provides a sweet and very aromatic touch, perfect for hot days or as a light starter.

A smooth, balanced recipe with a delicious contrast between tomato and melon, which makes this dish a different, elegant and very easy to prepare option.

Melon de Luz Gazpacho with Thermomix

INGREDIENTS

  • 🍅 900 gr of ripe tomato in pieces
  • 🍈 500 gr of melon pulp, cut into pieces
  • 🧅 100 gr of onion or chives
  • 🌶️ 160 gr red pepper
  • 🧄 1 clove of garlic
  • 🫒 100 ml olive oil
  • 🍋 25 g apple cider vinegar or 30 g lemon juice
  • 🧂 2 teaspoons salt
  • 💧 200 ml of water

OTHERS

  • 🍈 200 g melon, cut into pieces
  • 🫒 Extra virgin olive oil
1 We add the tomatoes, melon, pepper, onion, garlic, oil, vinegar and salt to the glass. We grind 4 min 30 sec / V-10.
2 Add the water and blend again for 1 min / V-10 until you obtain a fine and homogeneous texture.
3 We pour into a bottle or glass container and refrigerate. When serving, we add melon cubes and a drizzle of extra virgin olive oil.
