Beer meatballs with garnish with Thermomix

Recipe from our friend and collaborator Luz Maria Lagoa.
A complete dish, full of flavor and very comforting, ideal to enjoy with the family with an irresistible sauce and a vegetable garnish.

The combination of beer with spices and vegetables results in juicy meatballs and a smooth, aromatic sauce, perfect for dipping bread.

Ingredients

meat paste

  • 🥩 1 kg mixed minced meat
  • 🧂 2 teaspoons salt
  • 🌿 3 pinches of oregano
  • 🌱 2 pinches of parsley
  • 🧄 3 pinches garlic powder
  • ⚪ 2 pinches of white pepper
  • 🥚 3 eggs
  • 🥛 Milk (necessary amount)
  • 🍞 Breadcrumbs (necessary amount)
  • 🫒 Olive oil (to spray)
  • 🥯 Breadcrumbs for coating

Sauce and garnish

  • 🧅 250 g onion in pieces
  • 🧄 3 cloves of garlic
  • 🫑 100 g green pepper, cut into pieces
  • 🍃 3 dried bay leaves
  • 🛢️ 60 ml olive oil
  • 🍺 1 small can of blonde beer
  • 🍅 250 g natural crushed tomato
  • 🧂 2 teaspoons salt
  • 🌶️ 2 pinches of ginger
  • 🌰 2 pinches of nutmeg
  • 🌽 20 g cornstarch
  • 🧊 1 vegetable broth cube (optional)
  • 💧 500–600 ml of water
  • 🍄 170 g sliced ​​mushrooms
  • 🥦 500 g green beans
  • 🟢 1 small can of peas

Preparation

We place the minced meat in a large bowl and add the salt, spices and eggs. We mix well.

Little by little we add the milk and breadcrumbs until we obtain a suitable texture to form the meatballs. We cover and let it rest for at least 1 hour.

We form the meatballs, coat them in breadcrumbs and cook them in the air fryer preheated to 190° for 8 minutes, stirring and cooking for 4 more minutes.

We place the meatballs in a pot and add the mushrooms, green beans and peas.

We put the onion, pepper, garlic and oil in the glass. Blend for 4 sec, V-5 and fry for 8 min, 120°, reverse rotation, spoon speed, with basket.

We add the tomato, spices, salt, bay leaf and broth. Sauté for 4 min, 120°, reverse rotation, spoon speed.

Add the beer and cook for 3 min, 120°, reverse rotation, spoon speed, without beaker or basket to evaporate the alcohol.

We add the dissolved cornstarch, 200 ml of water and cook for 3 min, 120°, reverse rotation, spoon speed. We let it go down to 80° and grind for 1 min, progressive V 5-10.

Add the rest of the water, mix for 10 seconds, V-4 and pour the sauce over the meatballs. We cook over low-moderate heat for about 25–30 minutes.
