Risotto with cava and thermomix
Cava, thanks to its variety, goes well with a wide range of dishes. It is very versatile, its balanced acidity and the presence of carbon dioxide gas are responsible for the good association of cava with many foods and is the perfect combination for this risotto.
Risotto with cava and thermomix
Ingredients
- 350 grams of round or short grain rice especially for risotto
- 100 ml. of semi-dry cava
- 900 ml. of vegetable or chicken broth (keep it warm at the time of preparation)
- 1 onion
- 1 clove of garlic
- 50 grams of butter
- 45 ml. of virgin olive oil
- 50 grams of grated Parmesan cheese
- Salt and pepper to taste.
- Chives or parsley for decoration.
Instructions
- Crush the garlic clove in the Thermomix, just place the garlic and with several turbo shocks crush it until it is fine enough. Don't forget to clean the walls with the spatula so as not to leave any residue.
- Then add the onion cut into pieces and crush, schedule. 5 seconds / speed 6.
- Then, to make the sauce, add the olive oil and butter to the thermomix glass. Program 10 minutes / temperature of the dish / speed of the spoon.
- Again you will make a sofrito and this time incorporating the rice, and program it. 3 minutes /Temperature 100°/ inverse rotation /Spoon speed.
- Immediately add the cava and program again. 3 minutes /Temperature100°/ inverse rotation / spoon speed.
- Once this time has elapsed, add the hot vegetable or chicken stock. Program 20 minutes/ Temperature 100°/ Reverse rotation / Spoon speed.
- At the end of the time, check the cooking point of the rice, if there is no cooking, cook for 2 or 3 more minutes, program. 3 minutes /Temperature 100°/ inverse rotation / spoon speed.
- The ideal is to leave the rice al dente. For the Parmesan cheese to melt and impregnate all the rice with its exquisite flavor, add a little to the Thermomix program.
- Set aside a little to sprinkle on each plate for 1 minute / 100° temperature / inverse rotation / spoon speed.
