Sweet Puff Pastry Bites with Cream and Fruits with Thermomix
Recipe from our friend and collaborator Luz Maria Lagoa. This delicious proposal combines the crunchy texture of puff pastry with the softness of a traditional pastry cream and the refreshing touch of natural fruit.
A versatile and elegant dessert
These cakes are perfect for any celebration or a special snack. The key lies in the contrast of temperatures and textures: the well-golden and crispy puff pastry in front of a silky cream that melts on the palate along with the sweetness of the peach and the acidity of the kiwi.
Tricks for a professional finish
For the best result, make sure the puff pastry is very cold before going into the oven; This ensures that it rises evenly and creates those characteristic light layers. Furthermore, “creaming” the cream with the rods after resting is the secret to recovering its shine and lightness before filling.

Sweet Puff Pastry Bites with Cream and Fruits with Thermomix
INGREDIENTS
🥐 2 sheets of puff pastry
🥚 Beaten egg (for brushing)
⚪ White sugar (to sprinkle)
🍑 Peach in syrup (CN)
🥝 Kiwi (CN)
🥛 600 ml of milk
🍳 1 whole egg and 2 yolks
🍬 80 gr of sugar
🌽 50 g cornstarch
🍦 Vanilla essence
PREPARATION
1 Preparation of the cream: We put all the ingredients (except the vanilla) in the glass and program 9 minutes at 90°, speed 4.
2 Flavor and cool: We add the vanilla essence and mix for 10 seconds at speed 5. We pour it into a bowl, cover it with “skin-on” film to avoid a crust and, once cold, we store it in the refrigerator.
3 Cutting the puff pastry: We unroll the puff pastry sheets and cut them into perfect squares.
4 Formed: Brush with beaten egg and fold to form triangles. Brush the outside again and sprinkle with white sugar.
5 Baked: With the oven preheated to 200° (up and down heat), bake between 18 and 20 minutes or until golden brown. We let it cool on a rack.
6 Final filling: We open the puff pastries in half without cutting them completely. We beat the cream with a whisk to soften it, put it in a bag and fill it with the peach and kiwi cubes. Optionally, we decorate with powdered sugar.
