Ingredients of Perrunillas with Thermomix
35 raw almonds without skin
60 grams of olive oil
85 grams of sugar
1 teaspoon ground cinnamon
9 strips of lemon peel without the white part
200 grams of lard
2 egg yolks
1 pinch of baking soda
1 beaten egg white
100 grams of ground almonds
400 grams of flour
Preparation of Perrunillas with Thermomix
When you have gathered those ingredients, follow the steps that we indicate:
Pour about 75 grams of sugar into the robot’s glass and program
speed 10 / 30 seconds.
Add the lemon peel and cinnamon. program to
speed 10 / 30 seconds.
Next, add the butter, the egg yolks, the oil and the ground almonds. Start the robot at
speed 6 / 15 seconds.
Then add the baking soda and flour. With the help of a spatula, move the contents of the glass well for about 30 seconds.
Then, remove the dough from the glass and, with a rolling pin, stretch it well. Shape the perrunillas with a pasta cutter and place an almond on top of each one.
When you have them all, place them on a baking tray, previously lined with baking paper, paint them with the egg white and sprinkle a little sugar on top.
Put the tray in the oven, previously preheated, and keep them there for about 12 minutes at 170º.
