Ingredients
For the melon jelly:
250 grams of melon
5 sheets of gelatin
2 slices of Iberian ham
3 thin slices of Iberian bacon
Preparation
I crushed it with two mint leaves and brought it to a boil, while the gelatin leaves hydrated, I put them in and it was 4 minutes or so. I put it in the molds and in the fridge.
The lava:
Two slices of Iberian ham and three of fine Iberian bacon, I made them crispy and when they cooled down, I crushed them at 10 with a buckwheat toast.
At 4 hours I unmolded and plated. It is very simple and colorful
If I do it again, I will add small pieces of raw melon to the gelatin, so that it has a more intense flavor.
