It’s delicious after meals and if you have a lemon tree like I do, it’s a delight to do it in the summer for August nights to give an account of it

Ingredients
- 350 grams of white marc or eau-de-vie
- peel of 6 lemons well cleaned (without any of the white part of the lemon)
- 700 grams of water
- 750 grams of sugar
- 700 grams of lemon juice
Instructions
- 7 days before: in a glass jar or bottle we will put the eau-de-vie or marc and the lemon peel, it is very important that the lemon peel does not have any of the white part that is between the peel and the lemon because that would make the mixture bitter we close the bottle and let it macerate for 7 days in a dark and dry place
- After 7 days we put in our thermomix glass the lemon juice, water and sugar to make our syrup and we program 10 minutes, temperature 100º, speed 4
- We let the syrup cool down to room temperature
- With a strainer, strain the used marc or eau-de-vie and the syrup and collect it in bottles, mixing it well. Let it rest for a minimum of 24 hours in the refrigerator before consuming.
- We serve it very cold in shot glasses.
Notes
NOTE OF TIMES: we have put the minimum times to make and to be able to consume it fast, although the but purists maintain much but time as much the first step of maceration of the alcohol and the lemon, where macerations of between 1 month and 45 days are recommended, and equally 1 month once bottled
Ideal for after lunch or dinner.
