Ingredients of Honey and lemon cake with thermomix

  • 375 gr wheat flour
  • 1 on chemical yeast (Royal type)
  • Pinch of salt
  • 200 gr honey
  • Zest and juice of 1 large lemon (about 100 ml of juice)
  • 5 eggs (M) separated yolks from whites
  • 215 ml milk
  • 170 ml mild olive oil
  • Pinch of cinnamon (optional)

Preparation of honey and lemon cake with thermomix

  1. We start by sifting the dry ingredients (flour, yeast and cinnamon)
  2. 10 seconds / speed 8 Set aside and reserve
  3. Butterfly in blades, add the egg whites and a pinch of salt
  4. 4 minutes / 37°, speed 3
  5. then, same time and speed but without temperature.
  6. Set aside and reserve.
  7. Without removing the butterfly, we add the yolks and honey (this is warmed for a few seconds in the microwave to make it more liquid
  8. 6 minutes / speed 3.5
  9. then we add the zest, juice, milk and oil
  10. 2 minutes / speed 3.5.
  11. We remove the butterfly and add the reserved dry ingredients.
  12. 6 seconds / speed 4.
  13. We add the reserved whipped egg whites, little by little and with enveloping movements.
  14. We grease the mold and pour the dough, tap it lightly against the table to remove any air bubbles.
  15. Preheated oven to 175°!, heat up and down
  16. We bake for about 40/45 minutes / or until the toothpick comes out clean.
  17. We turn off and remove.
  18. Let it cool for a few minutes to be able to unmold, unmold and let it cool on a rack.
  19. ONLY LEFT TO ENJOY, GOOD PROFIT
