Ingredients
250 grams of bread flour
10 grams of fresh yeast
50 grams of sugar
2 eggs
15 grams of olive oil
100 lard at room temperature
icing sugar for dusting
50 grams of water
Preparation
Before starting we beat the eggs well in a bowl
We put in our Thermomix bowl 75 grams of beaten egg, the water and the sugar and we program
15 seconds / speed 5
We add flour and mix
15 seconds / speed 5
we will make a dough which we are going to knead
8 minutes / spike speed
If the machine moves a lot, it is normal, we can hold it a little
Add the yeast and knead again
3 minutes / spike speed
We add the oil to knead again
2 minutes / spike speed
let it rest for about 15 minutes in the glass without touching it
We take out our dough, put it on a surface greased with oil, I do it on the counter and give it with a little oil with my hand in the area where I am going to work.
We put the dough on the surface and divide it into pieces of about 50 grams each (we will get between 10 and 12)
With a roller we will stretch each piece as thinly as we can, making a rectangle
With a brush smeared in the lard, we will spread each rectangle of dough and make a cylinder with it, then with the hand and turning the ends we form the shape of the ensaimada and putting the final ends at the bottom, without them being very tight you circulate them
We put our dough in the form of an ensaimada on a baking tray, with greaseproof paper, leaving space between each one, as they will grow and we let the dough grow back in the closed oven for a few hours
