Crispy Potato and Onion Sticks in Air Fryer
600g of potatoes peeled and in large pieces
100g of coarsely grated mozzarella
70g of cornmeal
40g of french onion soup mix
125g of light sour cream
fresh chives or finely chopped green shallots
Sea salt flakes (optional)
Spray oil
Place the potatoes in a saucepan with cold water and bring to a boil over medium-high heat. Cook during 15 minutes until they are very tender. Drain and mash until you obtain a smooth puree. Let cool completely before continuing.
Mix the puree with the mozzarella, cornmeal, onion soup mix and sour cream. Add the chopped chives and mix until you get a homogeneous and manageable dough. This step is key so that the sticks maintain their shape during cooking.
Form cylinders of dough and cut into sticks of uniform size. Place them on a tray and lightly sprinkle with spray oil to help brown them in the air fryer.
