600 grams of milk cream
180 grams of granulated sugar
½ teaspoon vanilla
1 pinch of salt
Preparation of Crème Brûlée with thermomix
To begin the preparation of this delicate dessert, you must separate the eggs, the whites from the yolks. For this dessert only the yolks are used. Do not discard the egg whites, save them for another preparation.
Once the yolks have been separated, pour them into the Thermomix bowl together with the sugar and vanilla and program.
3 minutes / speed 4.
Once everything is mixed, add the milk cream, program to mix everything.
10 seconds / Speed 2.
Immediately program again but this time placing a little temperature to slightly cook the yolks, program.
7 ½ minutes / Temperature 90° / Speed 4.
Once the cooking time is over, distribute the cream in terrine-type molds and refrigerate for a couple of hours.
Before serving, sprinkle the surface of each mold with a generous amount of sugar and au gratin with a torch, until creating a caramel, let stand a few minutes so that the caramel layer hardens.
