🧀 115g cream cheese (Philadelphia type, at room temperature)
🍬 20-30 g icing sugar (adjust to taste or eliminate it if you are more bitter)
🥛 60 g half and half mixture (half milk, half whipping cream)
🥶 120 g whipping cream (minimum 35% MG, very cold)
☕ cold coffee to taste (American, espresso, cold brew…)
🧊 Ice to serve
🍯 Optional flavored syrup (vanilla, caramel, hazelnut, etc.)
Place the butterfly on the blades.
Add to the glass the cream cheese and the icing sugar. Mix 20 sec / speed 3.5 until smooth and lump-free.
Add the mixture half and half and the whipping cream very cold
Bat 1-2 min / speed 3.5 until you get a light and creamy foam.
🔔 Important: Don’t go overboard, this is not a meringue or a chantilly. The idea is a thick but silky foam that floats on top of the coffee without turning into whipped cream.
Fill a large glass with ice.
Add your favorite cold coffee (Americano, double espresso or cold brew).
If you wish, add a splash of flavor syrup (vanilla for something sweeter, caramel if you want drama).
Cover with a generous spoonful of the cheese foam.
🧁 You can take it as is or stir it a little so that the coffee mixes with the cream. But if you’re one of those who enjoy layers, leave it as is and drink on two levels: first the coffee punch, then the salty-sweet cloud.
