Some colleagues have asked how I make candied orange, I’ll give you the recipe I make for candied orange for donuts, brioche dough, madeleines, muffins, or simply for biscuits. I hope you like it and I encourage you to do it

Ingredients of candied oranges
The skin of 3 oranges with some meat
120ml water
200 g sugar
The sugar needed to coat
Preparation of candied oranges
Put the orange skins in a saucepan, cover with water and a pinch of salt, bring to the boil, then cook for 3 minutes.
Drain, cool under running tap water, put them back in the saucepan and cover with water, bring to a boil, then cook for 3 minutes, drain and cool again, cover with water and cook again. (We will do this process at least 3 times, you will wonder why repeat it at least three times, feet well,,, so we make sure that we remove the bitterness
After all this process, put 120 ml of water with 200 gr of sugar in a saucepan, bring to the heat and when the sugar dissolves, place the drained skins, cook them over medium heat, stirring from time to time, and when they reduce the syrup, turn off and place them on an oven tray previously lined with baking paper, with the oven at 60°, we dry them for about 45 min.
Then we take them out, let them cool and coat them in sugar, we spread them out on a tray, cover them with white paper and leave them in the fridge for 2 days, then we place them in jars and use them at convenience
