Recipe from our friend and collaborator Luz Maria Lagoa. It is a recipe for recycling or using egg whites from the latest preparations that we have made and using only the yolks.

I had them in the freezer. If you don’t have the whites, you can do it with 4 whole eggs.

Separated whites from yolks. I know that it comes out just as rich and spongy, since I had previously made it with other types of nougat, specifically soft almond nougat, hard almond nougat and suchard chocolate. It is super juicy and has a delicious flavor. I recommend it to you

This recipe also stands out for how versatile it is, since it allows you to use ingredients, adapt types of nougat and always obtain a tender, aromatic and very special result.

PISTACHIO NOUGAT CAKE with thermomix

Nougat and Pistachio Cake

INGREDIENTS

  • 🍃 6 egg whites (M)

  • 🍃 Pinch of salt

  • 🍃 300 g pistachio nougat

  • 🍃 100 g sugar

  • 🍃 150 ml milk

  • 🍃 50 ml mild olive oil

  • 🍃 1 natural or lemon yogurt

  • 🍃 200 g wheat flour

  • 🍃 1 on chemical yeast (Royal type)

PREPARATION

🔴 1. Place the butterfly on the blades, add the egg whites and salt, and whip for 6 minutes at speed 3.5. Reserve in a bowl.

🔴 2. Remove the butterfly, add the nougat in pieces and blend for 15 seconds at speed 5.

🔴 3. Add the sugar and mix 5 seconds at speed 4.

🔴 4. Add the yogurt, milk and oil, and mix for 1 min at speed 4.

🔴 5. Add the sifted flour and yeast, and mix for 10 seconds at speed 4. Transfer the mixture to a large bowl.

🔴 6. Add the egg whites in batches, mixing with sweeping movements from bottom to top.

🔴 7. Grease the mold well, pour the dough and tap it gently to eliminate air.

🔴 8. Bake in a preheated oven at 170° (up and down heat) for 40–45 min, until the toothpick comes out clean.

🔴 9. Remove, let it rest for 15 minutes, unmold and cool completely on a wire rack.
