So much boom with the Mercadona pineapples, well we’ll have to spend them🤣🤣🤣. No, joking aside, I wanted something fresh with pineapple, and since it was my day, I had to choose.
Note that you can make it with natural pineapple, but this, like certain acidic fruits, has an enzyme that prevents the gelatin from acting, unless they are previously cooked.cooked at temperature.
I say this from experience, because a while ago I wanted to make a cold cake with kiwis and there was no way for it to set. Investigating, I found that tip. That being said, let’s talk to you about this little cake, which, in addition to being simple, turned out super fresh and everyone liked it.
You can replace the cream with evaporated milk or coconut milk and you will get a succulent piña colada cake. Here at home they are not very fond of coconut, so, with cream.

BASE
- 8/10 sobaos cut in half

- 200 gr cream cheese
- 2 and a half envelopes (213 gr), pineapple powdered gelatin

STUFFED
- Pineapple slices without their juice in the glass, 6 sec, V-6.
- We add the juice, cream and cheese, 4 sec, V-6.
- Now we cook, remove the beaker and place the basket, 8 min, 100°, V-4.
- When it is finished, we open and add the gelatin powders, 4 min, 100°, V-4.
- We take the base out of the refrigerator and with the help of an inverted soup spoon, we pour it little by little.
- We let it cool, and then we will put it in the refrigerator for about 8/10 hours.
- After that time, we unmold and finish decorating to taste.
