300 grams of rice flour
50 grams of olive oil
100 grams of white wine
200 grams of pitted olives
200 grams of grated emmental cheese
3 large eggs
1 tablespoon baking soda
150 grams of milk
Pepper
200 grams of chorizo cubes (if you feel like it)

The first step to make this delicious salty cake is to prepare the rice flour. You can do it by grinding the rice in a Thermomix-type kitchen robot for
1 minute and 30 seconds / speed 10
If you prefer, you can also buy the rice flour already prepared and simply pour it into the bowl of the food processor.
Once you have the rice flour ready, add the eggs, baking soda, olive oil, dry white wine, milk and pepper to the bowl of the food processor. Mix everything during
10 seconds / speed 7
to obtain a homogeneous mass. Then, add the olives and mix for
10 seconds / reverse twist / speed 2
so that they are evenly distributed in the dough.
Also add the grated Emmental cheese and the chorizo cubes, and mix for
20 seconds / reverse twist / speed 2
Pour the mixture into a silicone mold or one lined with baking paper and preheat the oven to 180ºC. Bake the cake for
1 hour and 15 minutes, or until golden and a toothpick inserted in the center comes out clean.
