🥔 500 g potatoes

🧅 1 medium onion

🫑 1 green pepper

🫑 1/2 red pepper (optional)

🥚 4–5 eggs

🫒 Extra virgin olive oil

Detailed step-by-step instructions

① Prepare the vegetables

Peel the potatoes and cut them into thin slices or small cubes. The smaller they are, the juicier the tortilla will be. Cut the onion into julienne strips and the peppers into thin strips.

② Cooking in the fryer

Toss the potatoes, onion and peppers with 1–2 tablespoons of oil and salt. Place everything in the basket or in a mold. Cook at 180°C for 18–22 minutes, stirring every 6–7 minutes so that it cooks evenly.

③ Mix with the egg

Beat the eggs with a pinch of salt. Add the hot vegetable mixture and let it sit for a couple of minutes so that the egg tempers and becomes creamier.

④ Curdle the tortilla

Pour the mixture into a non-stick mold. Cook at 170°C for 10–12 minutes. If you prefer it more curdled, add 2–3 extra minutes. For “turned” version, cook 7 minutes, turn with a plate and cook 4–5 minutes more.
