Some time ago, the wonderful Ferran Adrià, one of the best chefs in the world, created a recipe that, just by presenting it, sparked controversy. Similar to the deconstruction of some dishes in the past, this one is no less controversial: liquid croquettes!! Sacrilege!!!

Ingredients

• 700 grams of ham broth
• 300 grams of milk
• 70 grams of butter
• 30 grams of oil
• 65 grams of flour
• 100 grams of chopped Iberian ham
• Croutons

Instructions

1. First, we cut the Iberian ham into small cubes and set it aside. We bring the ham broth and milk to a boil.

3. Then we set it aside in a bowl or pot. We add the butter and oil and program:

7. We add the ham broth, milk, and ham cubes again and program:

9. Next, we serve it in bowls, sprinkle the croutons on top, and they are ready to eat – simply like drinking a croquette.
